Nestled in Peru’s Ica Valley, in the foothills of the Andes, stands Hacienda La Caravedo Est. 1684, the oldest continuously operating distillery in the Americas.
Here, Caravedo Piscos are handcrafted in small batches, preserving the authenticity and heritage that have defined this historic estate for centuries. The result is the most exquisite expression of Peru’s national spirit—pisco—made with uncompromising quality and care.
Heritage, Craft, and Stewardship
Caravedo is dedicated to artisanal craftsmanship, environmental stewardship, and honoring centuries of Peruvian heritage. All of our piscos are 100% natural, crafted without any additives—no color, no sugar, no water, no flavoring—made entirely from a single ingredient: the finest estate-grown grapes. Distilled from pure wine (never pomace), our piscos are mixable, versatile, and authentically Peruvian, embodying a spirit of tradition, craft, and adventure.
Our smooth flavors trace back almost four centuries—born from an act of rebellion. In 1641, Spain’s King Philip IV imposed heavy taxes on all wine produced in Peru. In defiance, local vintners distilled their grape harvest instead of fermenting it, creating a new white spirit in hand-forged copper vats. They called it pisco, named after the Port of Pisco, from which it was exported, and a word meaning “little bird” in the Quechua language. To this day, Peruvians proudly call it their native spirit.
A Spirit with a Denomination of Origin
Like only a select few world spirits, pisco holds a Denomination of Origin, meaning it must be produced in specific coastal regions of Peru under strict regulations. It can only be distilled from one or more of eight approved grape varietals: Quebranta, Negra Criolla, Mollar, Italia, Moscatel, Albilla, Torontel, and Uvina.
Pisco is crafted in small batches using traditional copper pot stills and is always distilled to proof—a rarity in the spirits world, where most producers distill to high strength and dilute with water. At Hacienda La Caravedo, this centuries-old method is honored, producing an unaged, unaltered spirit that captures the pure essence of Peru’s vineyards.
